Cooking in a fryer
French Fries are one of the most beloved side-dish and it is important to prepare them following some simple instructions. The result will be crispy and light golden tasty potatoes!
Before
Choose the right container and use one fryer or pan for each different ingredient (potatoes, fish or sweets).
Choose good quality oil or fat in order to get a nice and tasty frying.
Heat the oil at a temperature always between 160 °C and 175 °C.
The relationship between food and oil (or fat) shouldn't be more than 1:10. If you use the fryer, for example, do not overfill the frying basket: only fill it halfway.
For an optimal cooking, fry the product from frozen.
Do not add salt or spices before or when frying.
When Frying
Keep the oil temperature between 160 °C and 175 °C.
Always follow the cooking instructions written on the package.
When deep-frying smaller quantities, reduce the cooking time.
After
After frying, let the oil drip off and shake the frying basket. Use a skimmer if frying in a pan.
Put the fries on an absorbent paper before serving.
Season to taste and serve.
Filter the oil and clean the fryer after using it.
Dispose of the oil correctly: one it has cooled, pour the oil in a suitable container and bring it to the recycling stations.

Follow these steps to get perfect baked potatoes:
preheat the oven and prepare the product by following the on-pack cooking instructions
line the baking pan with parchment paper
place the frozen product onto the tray on a single layer
cook following the instructions until a golden yellow colour
stir the product halfway through cooking
season to taste (garlic, rosemary, herbs) before cooking
add salt only after cooking.
