Salad with baby spinach, country-style carrots and marinated feta cheese

A colourful and tasty salad, which can also be an ideal main course if you complement it with some focaccia or wholemeal breadsticks. A mouthwatering alternative that you can serve at lunch break.
  • 150 g Orogel Carrots Rich Taste
  • 50 g feta cheese
  • 50 g baby spinach
  • 5-6 pitted green olives
  • 1 sprig of chives
  • extra virgin olive oil
  • fresh chilli pepper
  • 1 tablespoon lemon juice
  • salt and pink peppercorn

  1. Cut the feta cheese into small cubes and season with some oil, chopped chives, a pinch of chilli pepper and pink peppercorn.
  2. Microwave the Carrots Rich Taste following the instructions on the package.
  3. Season the baby spinach with some drops of oil and lemon. Place them on a plate, then put the carrots, feta and olives in the centre. Garnish the salad with some pink peppercorn and serve.
