Salad with baby spinach, country-style carrots and marinated feta cheese
A colourful and tasty salad, which can also be an ideal main course if you complement it with some focaccia or wholemeal breadsticks. A mouthwatering alternative that you can serve at lunch break.
- 150 g Orogel Carrots Rich Taste
- 50 g feta cheese
- 50 g baby spinach
- 5-6 pitted green olives
- 1 sprig of chives
- extra virgin olive oil
- fresh chilli pepper
- 1 tablespoon lemon juice
- salt and pink peppercorn
- Cut the feta cheese into small cubes and season with some oil, chopped chives, a pinch of chilli pepper and pink peppercorn.
- Microwave the Carrots Rich Taste following the instructions on the package.
- Season the baby spinach with some drops of oil and lemon. Place them on a plate, then put the carrots, feta and olives in the centre. Garnish the salad with some pink peppercorn and serve.
