Mint flavored panna cotta with strawberry drops
400 g fresh cream
100 g milk
100 g sugar
4 sheets fish glue (edible gelatin)
6 fresh int leaves
200 g Orogel strawberry drops
4 aluminum or ceramic single use moulds
Soak the fish glue in cold water for at least 15 minutes. In a saucepan put cream, milk, sugar and mint leaves. Heat without bringing to a boil.
Remove from heat and the previously soaked and squeezed fish glue: whisk until the fish glue is absorbed. Put the mixture into the moulds and let it chill in the refrigerator for at least 6 hours.
Melt the Orogel strawberry fruit drops according to the instructions on the package.
Remove the panna cotta from the moulds. Pour the melted strawberry drops on the dish, place the panna cotta on top and garnish with fresh mint leaves.
